Acid League Proxies Audrey by Sean Brock

This is a special collaboration between Acid League and Sean Brock, a celebrated chef from Nashville, TN. This is an Appalachian inspired blend containing Elderberries which bring tartness and deep color. Pawpaws, which add tropical, custardy notes by way of pawpaw vinegar. Sumac, which grows by the roadside in Appalachia, and brings citrusy spice. Preserved green beans known as “leather britches” lend smoke and umami. And a host of herbs and roots—like valerian, gentian, and ginseng—add a rich botanical backbone. From Sean himself, "My first thought for this collaboration was to recreate the wine that my grandmother Audrey used to make from the wild elderberries picked on her property. To complement the elderberries, we chose some of my favorite Appalachian ingredients like pawpaws, pine, and an old-fashioned bean preservation technique called leather britches. The result instantly transports me back to my grandmother’s home.
