NØLO Recipe: Holiday Piano

A festive, aromatic holiday punch featuring customer favorite The Pathfinder Hemp and Root. When we made this one in the NØLO test kitchen (our literal kitchen), we were stunned at how spicy, sweet, citrusy and tangy this sipped. I believe I may have said, "I will drink five thousand of these."
The great news? This one can be served as a prepared punch at your winter gatherings (or just for yourself, if you're partying alone).
The History
This recipe comes from our friends at The Pathfinder, who debuted at the bar 'Life on Mars' in the counter-cultural epicenter of Seattle, the Capitol Hill neighborhood, in 2021. It soon became a local darling and certainly no small affair between the bartenders and shopkeepers in the area, due to its unrivaled flavor and wondrous versatility in cocktails. Within no time, this miraculous elixir could be found at leading bars like Zig Zag, Rob Roy, Trick Dog, Death & Company, and Amor Y Amargo, and retail sales were fast outpacing production, leading the New York Post to declare ‘The Pathfinder has become the Pappy Van Winkle of the non-alcoholic drinks world,’ because of its scarcity and cult following.
Make It
Time to prepare: 5 minutes
- 15 oz The Pathfinder Hemp and Root
- 10 oz Dark Cane Rum (we use Fluère Spiced Cane)
- 5 oz Orange winter spice maple or agave syrup (or plain, if you can't be bothered)
- 1.5 oz All The Bitter Aromatic Bitters
- 10 sprigs of mint, orange slices, star anise pods (optional, garnish)
- 1 cup pure maple or agave syrup
- 1/2 cup water (optional, can adjust for thickness)
- 1 orange, zested and juiced
- 1/2 tsp ground cinnamon or 1 - 2 cinnamon sticks
- 1/8 tsp ground cloves or a few whole cloves
- Pinch of ground nutmeg
- 1 tsp vanilla extract, added after heating
Combine water, syrup, orange juice, orange zest, and all the ground or whole spices in a small saucepan. Simmer over medium-low heat, stirring occasionally, for about 10-15 minutes, until thickened. Remove from heat, stir in the vanilla extract. Cool and strain through a fine-mesh strainer. Store in an air-tight container for up to a month.
