NØLO Recipe: FIGLIA Sole Sorghum Punch

Bright lemon, fresh thyme, and earthy sorghum make this zero-proof punch feel summery, sophisticated, and deeply refreshing.
FIGLIA Sole does most of the heavy lifting with its juicy Meyer lemon, peach, basil, and gentle botanical heat. Lemon sparkling water stretches it into an easy pitcher drink, while sorghum adds a little Appalachian sweetness without making the whole thing heavy.
Simple enough for a random Tuesday and pretty enough to serve when friends stop by.
The Story
This recipe is adapted from FIGLIA’s own Thyme Lemon Punch, with one small but meaningful NØLO adjustment: we swap the simple syrup for sorghum.
Sorghum is richer, darker, and more interesting than ordinary sugar syrup. It brings a subtle caramelized earthiness that works beautifully against Sole’s bright citrus and soft herbal notes. It also gives the drink a genuine connection to Appalachian food traditions without turning the recipe into a historical reenactment.
No sorghum? Agave nectar works beautifully. It makes the punch a little cleaner and lighter in flavor, but still plenty delicious.
Our customers like their drinks natural and a little earthy. Sorghum and agave both nudge this aperitif further into that neck of the woods..
Fresh thyme keeps everything herbaceous and grown-up. We use it in the pitcher, then add a few simple sprigs to each glass. No elaborate garnish construction required.
Ingredients
Makes approximately 4 drinks.
- 8 oz FIGLIA Sole
- 9 oz chilled lemon sparkling water
- 1 oz sorghum syrup or agave nectar
- 1 lemon, thinly sliced
- 10–12 fresh thyme sprigs, plus more for garnish
- Ice, for serving
Make It
Add the FIGLIA Sole and sorghum syrup or agave nectar to a pitcher. Stir thoroughly until the sweetener is completely incorporated.
Add the lemon slices and thyme sprigs. Gently clap the thyme between your hands to release its aroma, but don't pulverize it. Let the whole thing rest for about five minutes.
Just before serving, pour in the chilled lemon sparkling water and stir gently.
Fill four glasses generously with ice and divide the punch among them. Garnish each glass with fresh thyme.
Add ice to the glasses, not the pitcher, so the punch stays bright, flavorful, and decidedly not watered down.
Lazy Barkeep Verdict: Stir a few beautiful things together, pour them over ice, and accept the compliments. It's a perfect summer patio pour.
