NØLO Recipe: Cava Limonada

Here's what I call a bright spot of sunshine. All at once punch-you-in-the-face lemony AND full of fun dry bubbles.
The History
A very talented baker friend of ours (Sam at Valhalla Cakes) wanted to host a Dry January pairing night with cocktails from Nolo. Well, we were so sick of Winter that we decided to make a little sip of summer on the Amalfi Coast. Or what we think that'd taste like in booze-free beverage form.
Hence, the Cava Limonada was born.
Make It
- 1.5 oz well-chilled Pallini Limonzero (or your favorite non-alcoholic limoncello)

5 oz FRESH lemon juice
- 3 oz Frexienet Sparkling Brut (or your favorite dry bubbly white)
< 0.5% ABV | Keep Limonzero and Frexienet well chilled. Build directly in coupe or champagne flute: pour Pallini Limonzero & fresh lemon juice to glass, top with Frexienet Brut (about 3 oz).
Garnish with rosemary sprig and (optional) lemon rind, pith removed.
