The History

A 19th-century cocktail classic, made modern by just swooping right in and taking the booze out. This classic originated in the 1850s, and historically combined champagne, a sugar cube, bitters, and sometimes a bit of brandy or cognac. The sugar is meant to bring a bit of sweet to a dry sparkling white, while waking up the bubbles.

This is one of the oldest cocktails "on the books" made new by de-boozifying it. 

Make It

Time to prepare: 5 minutes 

Place sugar cube at the bottom of a champagne flute and douse it with 2 - 3 dashes of your choice of bitters. Fill the glass with nonalcoholic sparkling wine, preferably a drier option. Garnish with a lemon peel twist.
