NØLO Recipe: Champagne Cocktail
Feb 06, 2026
Do you like luxury? Do you crave drama? Are you lazy? I've got your cocktail right here. Use the driest sparkling wine you can, as the sugar adds sweetness. If you find a complex, yeasty, or biscuity white (and we've got a few), it's the perfect canvas for this delish delight.
The History
A 19th-century cocktail classic, made modern by just swooping right in and taking the booze out. This classic originated in the 1850s, and historically combined champagne, a sugar cube, bitters, and sometimes a bit of brandy or cognac. The sugar is meant to bring a bit of sweet to a dry sparkling white, while waking up the bubbles.
This is one of the oldest cocktails "on the books" made new by de-boozifying it.
Make It
Time to prepare: 5 minutes
- 1 sugar cube
- 2-3 dashes All the Bitter bitters (choose your varietal, we reach for Aromatic)
- 5 oz nonalcoholic sparkling wine (our go-to is BOLLE Blanc de Blancs)
- Lemon peel twist
You're now clinking glasses with a mindful twist on cocktail history 🥂
