NØLO Recipe: Lime in da CocoNA

This frozen lime-coconut rum frozen cocktail tastes like pool weather in a glass. Inspired by a drink served at the Westin in St. John and recreated by our neighbors Heather and Geoff when they hosted us on Cinco de Mayo, this one immediately earned permanent summer rotation status.

Bright lime, creamy coconut, crushed ice, and tropical zero-proof rum blend into something dangerously crushable.

The Story

Heather introduced us to this frozen lime and coconut cocktail she'd first enjoyed in St. John, where they originally had it at the local Westin. The genius move? Entire lime wedge(s) are blended directly into the drink.

The tiny blended citrus pieces become bright little flavor bombs throughout the frozen cocktail and keep the coconut from getting too sweet or heavy.

One sip and you immediately understand why people drink these on vacation at noon.

Make It

YES! This one is batchable! 

Add all ingredients to a blender with ice. Blend until smooth and frosty.

The secret is blending the full lime wedge directly into the drink — tiny pieces of lime peel and citrus become bright little jewels throughout the frozen cocktail.

Pour into a chilled glass and serve immediately.

Vacation mode = mindfully activated.
